Pumpkin Bars

A tasty recipe from Tammy!

Ingredients

Bars

  • 4 large TIETZ FAMILY FARM EGGS
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 1 cup pureed TIETZ FAMILY FARM PIE PUMPKIN
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • pinch ground cloves

Frosting

  • 3 ounces cream cheese, softened
  • 6 tablespoons butter, softened
  • 1 teaspoon vanilla
  • 1 teaspoon milk
  • 1 1/3 cups powdered sugar
  • 1 (8-ounce container) Cool Whip, thawed

Instructions

Bars

  • Beat together eggs, sugar, oil, and pureed pumpkin.
  • Sift together dry ingredients.Fold into egg mixture.
  • Pour into a greased half-sheet pan (13×18"). Bake at 350 degrees for 20 minutes. Cool pan on wire rack.

Frosting

  • Mix the first five ingredients until smooth. Fold in Cool Whip.
  • Frost bars after they have cooled from the oven. Garnish with pecans or hickory nuts. Store bars in refrigerator after frosting.

Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies

One of Tammy's tasty treats!

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1 cup brown sugar, firmly packed
  • 1/2 cup white sugar
  • 2 TIETZ FAMILY FARM EGGS
  • 1 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups Quaker Quick Oats
  • 1 package Ghirardelli milk chocolate chips

Instructions

  • Cream together the butter and sugars until smooth. Add eggs one at a time, then vanilla. In a separate bowl, whisk together flour, baking soda, salt, and oats. Combine flour mixture and chocolate chips with butter mixture. Drop by large spoonfuls onto ungreased pans.
  • Bake at 350˚ for 10-12 minutes or until golden brown (I bake them on sheets lined with parchment paper). Cool on wire rack.

Notes

To make Oatmeal Raisin Cookies substitute raisins for the chocolate chips and add 1 teaspoon of cinnamon.

Mom’s Caramel Corn

Mom’s Caramel Corn

Caramelly and extra delicious, this recipe is from Tammy's mom!

Ingredients

  • 2 cups brown sugar
  • 2 sticks butter
  • 1/2 cup white syrup
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 8 quarts TIETZ FAMILY MUSHROOM POPCORN
  • * nuts are optional (toasted pecans are delicious)

Instructions

  • Bring the brown sugar, butter and syrup to a boil, stirring frequently. Boil for 5 minutes.  Remove from heat and add baking soda, cream of tartar and salt.  
  • Place popcorn in a lightly greased large roasting pan. Pour the caramel mixture over the popcorn (and nuts if desired) and bake in a 200° oven for 1 hour stirring every 10 minutes.
  • Cool on waxed paper before storing.

Classic Stovetop Popcorn

Classic Stovetop Popcorn

For those without a popper, here's the traditionalist's stovetop method!

Ingredients

  • 1/3 cup TIETZ FAMILY FARMS POPCORN
  • 1-2 tablespoons high-temperature cooking oil (peanut, grape seed, but not butter)
  • butter, salt, or preferred seasonings for serving

Instructions

  • In shallow 3 1/2-quart pan, heat oil on medium-high to 400 degrees (smoking oil is too hot). Test the oil by adding a couple corn kernels. When they pop, add 1/3 cup popcorn, cover the pan and shake gently to evenly spread the oil.
  • Once the popcorn starts popping, gently shake the pan moving it over the burner. Keep the lid slightly ajar to release the steam for crispier corn. When the popping begins to slow, remove the pan from the stove top. The hot oil will still pop the remaining kernels. 
  • Season and ENJOY!

Notes

Tasty seasonings: butter, salt, sugar, caramel, cheddar cheese, Blue Heaven Blue Cheese Powder, ranch, tabasco, taco, BBQ and savory blends.
Remember, always store popcorn in an air tight glass or plastic container with a tight fitting lid.
